A Day Celebrating VABeau

After the concert last Friday and a couple of new tires Sunday, VABeau made me promise him that I would not spend anymore money on his Birthday. I may have spent a little bit more money, but I think I did a great job of making his Birthday celebration very cost effective. Sometimes it is the free things you do that mean the most, right? I think he was very pleased with the day!

My first gift to him that day was waking up with him at 5:30 in the morning on my day off. It was tough, believe me, but I was pretty excited to start celebrating. While VABeau showered, I threw together this Birthday display:Growing up, my parents hung a Birthday Banner up in our living room which stayed up most of your Birthday week. I always loved how festive it was and how it put all of us in the Birthday celebrating mood. I decided to make my own so that we could start this tradition in our home.

I definitely recommend this homemade banner. It did not cost a thing! I printed out each letter, cut them, punched holes in each one, and strung them on ribbon. Check out RuffledBlog for the templates.
As soon as VABeau walked out the door for work I set out on the cheesecake making adventure. I had an unreasonable fear of making a cheesecake and I don't really know why. I love baking desserts. By High School I had already mastered pecan pie and by college I had attempted my first lemon meringue. I think my fear of cheesecake stems from the fact that VABeau is obsessed with cheesecake. I have heard numerous stories from numerous family members of his love of cheesecake over the years. I married the boy and so I married his love of cheesecake too. It's about time I stop relying on our neighborhood Cheesecake Factory for his favorite dessert, and make one myself. I decided to start out with a basic New York-Style Cheesecake from my trusty Southern Living.

New York-Style Cheesecake
  • 1 3/4 cup graham cracker crumbs
  • 1/3 cup butter, melted
  • 1/4 cup sugar
  • 5 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 tablespoons flour
  • 1 tablespoon vanilla
  • 3 large eggs
  • 1 (8 ox) container sour cream
Stir together first 3 ingredients. Press crumb mixture into bottom and 1 1/2 inches up sides of a lightly greased 9-inch springform pan.
Bake crust at 350 for 10 minutes. Cool baked crust on a wire rack.
Beat cream cheese at medium speed with an electric mixer until smooth. Gradually add 1 cup sugar, flour, and vanilla, beating until blended. Add eggs, 1 at a time, beating until blended after each addition. Add sour cream, and beat just until blended.
Pour into prepared crust.
Bake at 350 for 1 hour and 5 minutes or until center is almost set. Remove cheesecake from oven, cool on wire rack.
Surprisingly, my first attempt tasted great. However, it developed a huge crack during baking. Any tips on how to avoid huge craters in your cheesecake? I'm thinking I may have over-cooked it?
Cover and chill 8 hours. Gently run a knife around edge of cheesecake, and release sides. Store in refrigerator.


VABeau lucked out and got free Nats tickets from his company for the noon game on his Birthday. So he did what any reasonable Birthday boy would do, left work early and headed to the game for lunch and beer!
Not only did we get to see our favorite president when the president's race(Go TJ!) but we actually saw the Nats win a game (well, until the rain)

After a nap and some gift opening, we headed to on of our favorite new restaurants for great beer, cheese, oysters, and an amazing dinner.
Surprisingly, he still had room for dessert and had a piece of my cracked cheesecake.
I think he really enjoyed his Birthday! I know I really enjoyed getting to spend a whole afternoon and evening with my husband (something we have not had time to do lately)

Today is my sweet husband's 27th Birthday!

Weekend Recap!

I had been looking forward to this past weekend for awhile. We got to see our favorite band live and spend a night in our favorite town with some of our favorite people!

Friday
I got us tickets to the Dave Matthews Band and Zac Brown Band concert at National's Stadium for VABeau's early Birthday present. Despite the oppressive heat and humidity, we had a great time seeing our favorite band live and another great band open for them.

Saturday

Our friends, Kristin and Ryan, planned a super fun day of tubing on the James River outside of Charlottesville. All 11 of us made the drive to Charlottesville Saturday morning with a quick stop by Bel Air for some delicious sandwiches and beer for the day on the water.

Sunday
We started the day with breakfast at The Tavern-a UVA staple. Then we set out for an afternoon of a wine tasting with Kristin while Ryan played golf with Mike. Poor Kristin had no idea what she was getting into! After a wonderful tasting at Barboursville Vineyard, we made our way to Horton Vineyards for the final tasting of the day. When we parked at Horton we noticed the front right tire on my car had a leak. Apparently we ran over something during the short drive between vineyards that damaged not only one but 2 of my tires. VABeau changed the front tire and then we decided to make lemonade out of lemons. We continued on with our tasting at Horton before heading back to Charlottesville to buy 2 new tires. The 3 of us spent the rest of the day at Red Robin while the tires were replaced. Once the car was ready, we met up with Ryan and Mike and headed back to DC with a short stop at Blue Ridge Seafood for a great dinner. Kristin was such a great sport throughout the whole ordeal and I'm so impressed with how the 3 of us made the best of everything! It turned out to be a great day!

Menu Monday

Menu Monday is back! I would like to start doing the menus from the previous week. This way I can not only share the recipes, but also my fails and successes in the kitchen, as well as my reviews of the meals. So, without further adieu, last week's menu:
Monday
*Shrimp Saganaki
*Crusty French Bread
I have shared my love for this meal and it's recipe before. If you missed it, definitely check it out. Surprisingly, we had Shrimp Saganaki in Santorini one night and we both agreed this home-made recipe is even better!

Tuesday
*Sausage and Mushroom Pizza

The afternoon started with delicious wine and cheese at Lyon Hall with my friend, Kristin. This homemade pizza was the perfect meal to come home to. I did not follow a specific recipe for the pizza, just added my favorite toppings to Trader Joe's pizza crust and sauce. Check out the recipe below!

Thursday
*Trader Joe's Marinated Pork Tenderloin
*String Beans and baby red potatoes
VAbeau picked up the pre-marinated tenderloin during his weekend TJ trip. I love TJ's pre-marinated meats, they make meals so easy! However, this meal was a bit of a fail. The tenderloin package said to bake it for 20 minutes per pound. Since I had 1.5 pounds of meat I figured 45 minutes would be more than enough time to cook the tenderloin. WRONG! 15 minutes before I needed to leave for work, I took the tenderloin out of the oven to discover it was still raw! I guess ovens really do vary :( I settled for chicken nuggets and left VABeau in charge of the tenderloin. Another 45 minutes, and he said it was FINALLY ready. I did get to try the leftovers and agreed with VABeau that the tenderloin was pretty delicious. However, I'm not so sure it's worth the time it took to cook it.

Our post-tubing meal! They were able to seat all 12 members of our group and still had the Jerk Chicken Pizza. Mellow is without a doubt my favorite pizza place.

Sunday
*Blue Ridge Seafood in Gainesville, VA
We stopped at this seafood shack and had dinner with Kristin, Ryan, and Mike on our way back to DC. They are known for their crabs but we were all way too exhausted to pick crabs so we settled for a fried feast instead. I had a soft shell crab, fried oysters, and hush puppies. It was a great way to end our weekend and the meal was delicious but probably took a year off of my life.

VABelle's Sausage & Mushroom Pizza
  • Traditional Pizza Sauce
  • Pizza Dough (store bought or homemade)
  • 6 oz Lean Ground Sausage
  • 4 oz Mushrooms, sliced
  • 1 Tomato, sliced
  • Shredded Mozzarella CheeseCoat a cutting board with cornmeal. Spread dough (I used trader joe's pre-made dough) to desired thickness and shape (or whatever shape you can get in my case!)
Brown Sausage over medium heat. Remove from pan.
Add mushrooms to the pan and saute for about 4 minutes.
Top dough with minimal tomato sauce since the tomatoes will also add to the tomato flavor. Add mozzarella cheese, tomato slices, sausage, and mushrooms. Transfer to preheated pizza stone or cookie sheet. We used our new William Sonoma Pizza Stone and it worked amazingly. Our first attempt with the stone a few weeks ago failed because we did not preheat it properly. This time we preheated it at 400 degrees for 20 minutes and it made a huge difference! If you have any tips on cleaning the stone or other uses I'd love to hear them!
Bake 8-10 minutes or according to dough directions and enjoy!
