Menu Monday Returns!

Monday*Oven Baked Chicken Parmesan

This meal consisted of the ultimate comfort food! Just looking at this picture one week later makes my mouth water. The recipe is also incredibly easy and it takes just over 30 minutes to create this classic Italian dish. Check out the recipe below!

Wednesday*Cava with Ryan and Kristin
We met our friends in Arlington to try out the new Greek Mezze (or tapas) restaurant. Kristin and Ryan also spent their honeymoon in Greece so it was really fun to all relive our time there over some delicious Greek Mezze. We ordered a variety of small dishes to share but the favorite of the table was by far the Saganaki. It's essentially cheese smothered in oil and lit on fire right at your table. There's nothing healthy about it, but man it was delicious! Overall we had a great experience at Cava, they had a wide variety of Greek dishes and a great drink selection.

Thursday*Mad Fox Brewing Company
VABeau and I decided to spend Thursday evening at one of our favorite local bars. Neither of us were too hungry so we split a bunch of appetizers and sipped on Mad Fox brews. I can never go to MF without ordered their Frickles. They have some of the best fried pickles I have ever tasted!

Friday*Thai Chicken PizzaThis Trader Joe's recipe was a hit! The pizza was so easy to make and tasted great. I am in love with TJ's easy pizza dough now and can't wait to check out more of their recipes.

Saturday*The Tasting Room
We finally decided to cash in a very generous wedding gift card from Bobby D Saturday afternoon. He knew I loved enomatic machines and found the perfect wine bar that had them.We had so much fun tasting almost all of the wines and even indulged in a cheese plate.
It was the perfect afternoon but the wine consumption resulted in a Saturday night of leftovers/takeout!

Oven Baked Chicken Parmesan

  • 4 boneless, skinless chicken breasts
  • flour
  • 1 egg, slightly beaten
  • 3/4 cup Italian seasoned dry bread crumbs
  • 1 jar (26 ounces) marinara sauce
  • 1 cup shredded mozzarella cheese
Preheat oven to 400 degrees. Arrange a plate of flour, a bowl of the beaten egg, and a plate of bread crumbs. Dip chicken in the flour, then in the egg, and finally in bread crumbs, coating well.

In a 13x9 inch glass baking dish, arrange chicken. Bake chicken uncovered for 20 minutes. Remove chicken from oven, cover in marinara sauce, and top with cheese. Bake an additional 10 minute or until chicken is cooked and cheese is bubbling.

Serve the chicken alone or with hot cooked pasta.

  4. The Thai chicken pizza looks so good! I love Trader Joes! And those wine machines- our Whole Foods has one- gonna be awhile till I can indulge again!
