My parents were in town Monday night so they took us out to eat at one of our favorite local spots, Dogwood Tavern. I couldn't resist one of their delicious cheese covered burgers!

Slow Cooker Pork Ribs

I haven't been this proud of a meal in long time. I've never made ribs before so I had very low expectations, but this Southern Summer meal far exceeded any of my expectations.
I started with one huge rack of ribs that I cut in half then rubbed down with a mixture of paprika, salt, and pepper. I tossed them in our crock pot with 1 cup of chicken stock and a couple cups of barbecue sauce (sweet baby rays!)
6 hours later they were ready for a final browning. VABeau ended up having to work late so I passed on finishing them on the grill and turned to the internet for some indoor rib inspiration. I found several recipes that recommended broiling the ribs so I did just that. I removed the ribs and placed them on a wire rack placed on a foil lined cookie sheet. I slathered them in more bbq sauce.
I then broiled them in the oven for about 5 minutes and was left with pure perfection. I had no idea ribs could be this easy and they will definitely get made again before Summer ends!

Chicken Lo Mein
Our wok has been collecting dust so we decided to bust it out and throw together an easy meal.
First we cooked cubed chicken breast.
I then boiled some egg noodles and tossed a pack of Trader Joe's frozen stir fry veggies into the wok (TJs made this meal ridiculously easy!)
I added in a few sauces we had on hand,
and 15 minutes later we had a healthier and cheaper version of takeout!
